479 Popcorn- A great gift to send during the holidays

Yesterday I got an exciting package I had been waiting for from 479 Popcorn. If you have not heard of 479 Popcorn, let’s just say it may be some of the best I have ever had. I asked the company for a sampler box and received it in the mail and immediately opened every box to try right away. The flavors that came in the sampler box were ginger sesame caramel, black truffle white cheddar, madras coconut curry and cashews, pimenton de la vera, and chipotle caramel and almonds.

Every flavor was AMAZING, however my two favorite flavors were the ginger sesame caramel and black truffle white cheddar. Oh my gosh so yummy! These are definitely fun treats to send during the holidays to friends or family, or just to simply buy for yourself 🙂 To order you package you can click

Pumpkin Pie Butterscotch Cookies (Healthy Cookie)

I cannot even count the amount of batches i have made of these cookies. Seriously, best thing ever! I brought them up to Santa Clara last weekend and all of the girls loved them, and when I made them at home my brothers even liked them (even though they are healthy cookies). These are a delicious treat for the month of thanksgiving and there is no guilt when you eat the whole batch a couple  🙂

Pumpkin Spiced Oatmeal Butterscotch Cookies

  • 1 cup whole wheat flour
  • 2 cups quick oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • ¾ tsp nutmeg
  • ¾ tsp ground cloves
  • 2 tbsp unsalted butter, room temperature
  • 3/4cup unpacked brown sugar
  • 1 large egg
  • 6 tbsp canned pumpkin
  • 2 tsp vanilla extract
  • 3/4 cup butterscotch chips

Preheat oven to 375°; line two baking sheets with parchment paper or use a silpat. In a medium bowl, mix together the dry ingredients. In larger bowl mix together the wet ingredients. Slowly add dry ingredients to wet.  Add butterscotch chips. Place rounded tablespoons of the cookie dough on sheets. Bake for 8-10 minutes.

If you are not a fan of butterscotch chips, then I am sure chocolate chips would taste just as amazing as well, and maybe adding in toffee pieces could spice it up!
