Pumpkin Pie Butterscotch Cookies (Healthy Cookie)

I cannot even count the amount of batches i have made of these cookies. Seriously, best thing ever! I brought them up to Santa Clara last weekend and all of the girls loved them, and when I made them at home my brothers even liked them (even though they are healthy cookies). These are a delicious treat for the month of thanksgiving and there is no guilt when you eat the whole batch a couple  🙂

Pumpkin Spiced Oatmeal Butterscotch Cookies


  • 1 cup whole wheat flour
  • 2 cups quick oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • ¾ tsp nutmeg
  • ¾ tsp ground cloves
  • 2 tbsp unsalted butter, room temperature
  • 3/4cup unpacked brown sugar
  • 1 large egg
  • 6 tbsp canned pumpkin
  • 2 tsp vanilla extract
  • 3/4 cup butterscotch chips


Preheat oven to 375°; line two baking sheets with parchment paper or use a silpat.In a medium bowl, mix together the dry ingredients. In larger bowl mix together the wet ingredients. Slowly add dry ingredients to wet.  Add butterscotch chips. Place rounded tablespoons of the cookie dough on sheets. Bake for 8-10 minutes.

If you are not a fan of butterscotch chips, then I am sure chocolate chips would taste just as amazing as well, and maybe adding in toffee pieces could spice it up!

  1. These look really good. I am going to try them out. I had pumpkin pie at the weekend for the first time and really enjoyed it. Can you use fresh pumpkin, cooked and blended rather than the canned pumpkin?
